We know, these are beautiful but… what in the world is Pataxte?!

Pataxte (Pronounced: pah-TAH-sh-tay) or Theobroma bicolor is a close relative to Theobroma cacao (the tree where the chocolate we are all familiar with comes from!). Theobroma bicolor was a tree long forgotten, strewn aside by Europeans because it is difficult to cultivate and the beans harder to preserve and work with. Now, it’s being cultivated with care primarily in Oaxaca, Mexico to maintain this rare tree and its fruit. So what does it taste like? It’s nutty, creamy, a teensy bit floral. Inside the stunning pataxte shell you’ll find a rich filling of raspberry, fig, traminette reduction with a touch of dark chocolate. This combination reminded us of an indulgent profile similar to peanut butter and jelly, hence the name! Sit back and enjoy this unique experience.
